Homemade Chocolate and Vanilla Pudding

Ingredients

Vanilla Pudding
2 Cups Milk
1/4 Cup Cornstarch
1/2 Cup Sugar
1 Tbsp Vanilla (1 tsp if its pure extract)
1/8 tsp salt

Chocolate Pudding
2 1/4 Cups Milk
1/4 Cup Cornstarch
1/2 Cup Sugar
1/2 Tbsp Vanilla
1/8 tsp Salt
1/4 Cup Cocoa Powder

I L-O-V-E homemade pudding. Ever since the first time I made it I have had a secret addiction (okay so it's not so secret anymore...haha). My favorite part is the pudding "skin" after it cools. Yeah, it's one of those things you either love or hate. :-) 

In these pictures I made a larger batch which is why you will see there is much more than 2 cups of milk in my pan, so pay no attention to that. 

Start off by adding your COLD milk to the pan.

 Add in your cornstarch....
 Whisk in the cornstarch until it is completely dissolved with no lumps. It's crucial that you add this while the milk is still cold because it will clump in warm or hot milk.
 Add in your vanilla.
 Begin heating your milk on medium heat. Stir constantly while the milk heats so that nothing sticks to the bottom of your pan.
 When the milk is warm add in your salt & sugar and continue stirring.

Continue to cook and stir until the pudding thickens.
 If you are making the chocolate pudding recipe, sift  your cocoa powder and stir it into the pudding. Add the cocoa powder while the pudding is WARM/HOT. Cocoa powder will clump in COLD liquids unlike the cornstarch.
 Allow the pudding to cool in the fridge before serving.

 I made a batch of each and layered them in this cup....Yummy! My kids absolutely LOVE pudding. I think they get that honestly. 

** For a smoother pudding: After the pudding is completely cooled, remove the pudding "skin" from the top (you can eat this if you're like me or simply discard it). Then get out your mixer and, on a low speed, mix the pudding until smooth. This will get out any clumps that formed while setting up. This will make your pudding look especially nice if you're serving it for guests.
