Tasty Tuna Salad

Tasty Tuna Salad

Ingredients:
4 Cans of Tuna
Two sticks of Celery, chopped
1/4 C onion, finely chopped
1/2 tsp black pepper
1 tsp lemon juice
1/2 C Whipped Dressing

Open and drain all four cans of tuna and place in a large bowl...

Chop your celery...

Add the Whipped Dressing to the tuna...

Add in the celery and onion...

Add pepper....

Mmmm...looks good...

Add lemon juice....


Serve between two slices of bread (whole wheat would taste great, but I was out)

You can garnish with celery leaves....Enjoy! If it wasn't for the mercury content in tuna I would eat it EVERYDAY! I love tuna! :-) 

Chicken BLT Pasta Salad

Chicken BLT Pasta Salad

Ingredients
1lb Pasta
3/4 C Shredded Cheddar
1 Tomato, Diced
1 1/2 C Ranch w/ Bacon Salad Dressing
1 Can Chicken Breast


Cook, rinse and drain the pasta and place in a large bowl.

Dice the tomato....

And add to the bowl....

I cheated and used Hidden Valley's Bacon Ranch dressing. You could always buy the ranch packet, make the dressing and cook up some bacon too. Once again this was just a simpler short cut. While I like generally making everything from scratch I'm not opposed to using short cuts every once in awhile to save time in the kitchen. :-) 

Add the ranch dressing...

Add in the shredded cheddar cheese....

Lookin' good....

Shred the can of chicken and add it into the mixture...


 Mix all the ingredients until the pasta is well coated. You can serve it on a piece of romaine lettuce. It looks nice and tastes good too. :-)

Delicious Chicken Pasta Salad

 Ingredients:

1 Tbsp finely minced onion
5 Tbsp finely minced celery (about 2 sticks)
2 Tbsp Better than Bouillon Chicken Base
3/4 C Water
1 C Miracle Whip
1 Can All natural chicken breast
2lbs Garden Pasta (or any pasta of  your choosing)
Pepper (optional)


Slice and chop your onion.



Then I put my chopped onion into my food chopper to finely minced it. :-) 

Then chop and mince your celery.

Remove the celery leaves and keep them. (We'll use them as a garnish for later)



Then take 3/4C water and heat it for about 45 seconds in the microwave to warm it up. Then mix in 2 Tbsp of chicken base to make a strong broth.

So now we have our "flavor" (Celery, Onion, Miracle Whip, and concentrated Chicken Broth)

Cook the pasta. Rinse it in cold water until all the pasta is cooled and drain. Then place in a large bowl.

Add in your chicken broth...

Then the miracle whip...

Then the onion...

Then the celery....

Then shred the chicken from the can (I always get the all white meat canned chicken that's in water) You can always cook your own chicken too but this is quick and easy. :-) 

Add in the chicken....

Serve on a color plate with a few celery leaves to garnish and your done!! Perfect for a summer luncheon, picnic or even just lunch at home. :-) My kids even love this!

Homemade Granola Bars

Okay...so I already fell in love with Andrea's (from Simple Organized Living) Homemade Granola Recipe (HERE). I made the homemade granola quite a few times...a batch with nuts (that Mommy & Daddy could enjoy) and a batch without that the kids could enjoy. :-) I was JUST thinking how much I would love to find a GREAT granola bar recipe and guess what? Andrea posts a super awesome granola bar recipe. :-D I was super excited; especially because she had been looking for the perfect recipe and this was met her search requirements; so you know it had to be good. 


I picked up the ingredients last night and made a batch for the kids to have today. My warning to you is to make sure that you have enough ingredients to make TWO batches because they are so good you will probably eat the first batch yourself! This is going in my "I will FOREVER love and make this recipe" section of my cookbook. haha They were so simple to make too.

UPDATE: Now when I make these Granola bars instead of mixing the chocolate chips in with everything else (since they melt into the mixture), I sprinkle a layer of chocolate chips (I use the mini morsels) across the baking sheet, then pour the granola mixture on top, spread it out and press it into the baking sheet using wax paper. I then sprinkle some more chocolate chips on top and press them in as well. This give more of the appearance of those "store bought" granola bars. :-)
